Zucchini cake with nuts

Zucchini cake and cakes with other vegetables are very popular nowadays, so I wanted to try what it is all about. Like carrot cake, zucchini cake contains zucchini mixed into the dough and is also one of the modern vegetable recipes. Nuts such as walnuts or pecans are also added to the dough, as well as fruits including pineapple, raisins and grated coconut. I tried mascarpone with condensed cream with a little bit of lemon peel and garnished it with pistachios and nuts.

Zucchini cake with nuts:


150g brown sugar

200g flour

120g grated zucchini (dried) 150ml oil

100g walnuts

pinch of salt 1 tsp

1 teaspoon of cinnamon

1/3 teaspoon of soda bicarbona

1 teaspoon of baking powder

For the cream:

150g Mascarpone

60g Condensed milk

Lemon peel



Turn on the oven at 180 degrees, (160 if you have an oven with a fan)


Put the eggs with sugar in a larger bowl and mix.


Add oil.

4.Mix the dry ingredients and sift the flour mixture into the dough. Stir gently.

5.Add grated zucchini and chopped nuts and mix gently.

6.Put the dough in a greased form and bake at 180 ° C for about 25 minutes. After baking, let it cool.

7.Whisk the mascarpone and add the condensed milk and lemon zest and mix it. Don't mix it for a long time so that mascarpone doesn't crash.

Garnish the cake with cream and sprinkle with pistachios.
