Carrot cake and cakes made of other vegetables are very popular, so I wanted to try what it is about. A carrot cake that contains carrots mixed into a dough is one of the modern vegetable recipes along with a zucchini cake. Nuts such as walnuts or pecans are also added to the dough, as well as fruits including pineapple, raisins and grated coconut. It is filled with mascarpone cream and garnished with walnuts.
The spices I added to the carrot cake smelled so amazing during baking and it reminded me of Christmas time. There's something just magical about this cake - texture! flavor! icing! Every bite is pure bliss and from now on carrot cake will be my favorite kind of cake. The carrot and oil makes it moist, the spice flavours are outstanding.

Carrot cake with nuts:
Ingredients:
For the cake:
200g flour
120g chopped walnuts
160g grated carrots
200g brown sugar
4 eggs
200ml oil
1.5 teaspoons ground cinnamon
pinch of salt
a pinch of ginger
a pinch of ground fresh pepper
1 & 1/2 teaspoon baking powder
1/2 teaspoon baking soda
For the filling:
250g mascarpone cheese
150g whipping cream (33%)
150g of powdered sugar
Let's Make It!
As this recipe is mix all in one, it is quite easy even for beginners. But let's take you step by step:
1. Turn on the oven at 180 degrees, (160 if you have an oven with a fan)
2. Put the eggs with sugar in a larger bowl and mix.
3. Add oil.
4. Mix the dry ingredients and sift the flour mixture into the dough. Stir gently.
5. Add grated carrots and chopped nuts and mix gently.
6. Divide the dough into three small greased pans or two larger ones and bake at 180 ° C for about 25 minutes. Let it cool after baking.
For the mascarpone filling, mascarpone cream:
7. Whip the cream to soft peaks then add the sugar and mascarpone and mix until thick. I find that over mixing mascarpone makes it runny, so after adding mascarpone, mix just gently. If you are using cream cheese, you can mix for longer.

This is very tasteful traditional cake, which can be used for birthday cakes too. I really enjoyed the flavours and this cake became one of my favourite cakes. My visitors always ask for the recipe. It is deeply moist (thanks to the carrot and oil) and rich in flavours. The brown sugar gives the cake delicious zing together with teh spices.
